You will need (for 8 to 10 little popsicles ... I made 8 and had leftovers which I mixed in yogurt):
- about 1 pound of strawberries
- 1/2 can of coconut milk (I got the unsweetened organic one)
- 1 tsp of cornstarch
- about 1/3 cup of brown sugar or agave syrup or some sort of sweetener (adjust to taste)
- a smal capful of vanilla extract
- the juice of a 1/2 lemon
First, puree the strawberries with the lemon and the vanilla. You can keep a few of them and chop them finely to have pieces of fruit in the popsicle if you like that. Set that aside.
Mix the cornstarch with a little bit of water to dissolve it. Add the cornstarch mixture to the coconut milk in a small saucepan and add the sweetener.
Warm on low heat for a few minutes until it thickens.
Let the coconut milk cool down a bit then mix in the strawberry mixture.
Let cool down fully before transferring to popsicle molds or ice cube trays or whatever floats your boat. Place in the freezer until frozen.
